Located in Double Bay Sydney, the InterContinental brings the former Ritz Carlton site back to life. After being closed down several years ago, developers were eager to knock the place down, yet as many feared the existing building would be converted into apartments, their plans were consistently rejected by the local council. That is until Peter Wilding, the managing director of Royal Hotels Australia, set his eyes on the site and grabbed the chance to restore the hotel to its former glory. In order to make his vision come to life, Wilding worked with Bates Smart Architects to conserve the hotel’s iconic features such as the original Italian white marble and grey green marble fireplaces, whilst incorporating modern design for a new take on the beautiful old site.
The Stillery houses a seven-metre-long marble and leather-clad bar with a collection of gins from locally crafted spirits to rare imported bottles.
The rooftop pool, lounge and bar with its private cabanas and harbour views also offers outdoor dining.
The hotel has just one restaurant, Stockroom, with two dining spaces – a spaciously smart-casual dining area and a European pantry-style internal room, featuring bar stools at marble-topped chef’s tables. KWD endorses all of the finishes in this stunning restoration, from the heavily patterned carpet, dark European Oak timber flooring, monochrome mosaics, substantial use of marble, and exquisite fabrics.
